Espresso Mocktini

Ingredients
1 tablespoon maple syrup, to rim glass
2 tablespoons cocoa powder, to rim glass
Ice, for shaking
4 ounces brewed and chilled New England Coffee Espresso Especiale
2 ounces heavy whipping cream
2 ounces maple syrup
1/4 teaspoon vanilla extract
1 pinch salt
1 dash cardamom or cinnamon aromatic bitters, optional
Coffee beans, for garnish

Place the 1 tablespoon of maple syrup on a plate and the 2 tablespoons cocoa powder on another plate; dip the rim of a martini glass in the syrup first, then in the cocoa powder.

In a cocktail shaker, add the ice, coffee, heavy cream, maple syrup, vanilla extract, pinch of salt and bitters.

Shake vigorously for a minute or longer. (The longer and more vigorously you shake the more foam you will have for the top.) Strain the liquid into a martini glass, spoon on any remaining foam, and garnish the top with a few coffee beans.
